Twice Baked Potatoes

When winter is getting pretty harsh, I like to warm up the house and my belly with this easy-to-make potato recipe. You can dress it up as much as you like and it will always hit the spot. Baked potatoes are the ultimate comfort food, but when you bake them twice they get this extra bit of crisp that sends them over the top.

Ingredients
  

  • 2 large russet potatoes
  • Cheese your choice, I used Gouda
  • butter
  • salt & pepper

Method
 

  1. Preheat the oven to 425F/220C
  2. Wash your potatoes first. Take a knife and poke holes all over the potatoes
  3. Place directly on the over rack and bake for 45-60 minutes (Test by squeezing the potato to see if it has a nice give)
  4. Once done, slice open each potato and scoop out the insides into a bowl
  5. Mix in butter, salt, pepper, cheese, and any other toppings.
  6. Scoop insides back into the jackets and bake an additional 20 minutes
  7. Top with scallions before serving

Notes

This is where the potato shines. You can add a variety of toppings to make this dish even more delectable. Add bacon, scallions, broccoli, and more!
