Method
- Preheat the oven to 425F/220C
- Wash your potatoes first. Take a knife and poke holes all over the potatoes
- Place directly on the over rack and bake for 45-60 minutes (Test by squeezing the potato to see if it has a nice give)
- Once done, slice open each potato and scoop out the insides into a bowl
- Mix in butter, salt, pepper, cheese, and any other toppings.
- Scoop insides back into the jackets and bake an additional 20 minutes
- Top with scallions before serving
