Sweet Potato Pie

This warm spicy sweet potato pie is perfect for Fall. Pair with whipped cream or warm custard and you have yourself a delicious after dinner treat. Or be a bit cheeky and enjoy at breakfast.

Ingredients
  

  • 2 Large Sweet Potatoes
  • ½ cup or 5 ounces Evaporated Milk
  • 3 Eggs
  • 1 cup of Sugar
  • 1 ½ sticks of Butter
  • 3 TSP Vanilla Extract
  • 3 TSP Nutmeg
  • 3 TSP Cinnamon
  • 2 Graham Cracker Crust Pie Shells

Method
 

  1. Preheat oven to 350 degrees.
  2. Peel and dice sweet potatoes.
  3. Bring to a boil in a large pot.
  4. Simmer until the potatoes have softened.
  5. Drain and pour the sweet potatoes into a large mixing bowl.
  6. Add all the remaining ingredients.
  7. Mix until smooth*
  8. Pour the mixture into the pie shells evenly.
  9. Bake for 50 - 60 minutes
  10. Sprinkle some nutmeg on top as garnish.

Notes

Smooth Texture Tip
To smooth out the texture of your pie mix, use an emulsifier to break up the larger chunks of potato. This will ensure a nice smooth batter for your pies.
