Method
- Preheat oven to 350 degrees.
- Peel and dice sweet potatoes.
- Bring to a boil in a large pot.
- Simmer until the potatoes have softened.
- Drain and pour the sweet potatoes into a large mixing bowl.
- Add all the remaining ingredients.
- Mix until smooth*
- Pour the mixture into the pie shells evenly.
- Bake for 50 - 60 minutes
- Sprinkle some nutmeg on top as garnish.

Smooth Texture Tip
To smooth out the texture of your pie mix, use an emulsifier to break up the larger chunks of potato. This will ensure a nice smooth batter for your pies.
